Preheat the oven to 350°. Use some non-stick spray on a 5” x 9” loaf pan and place parchment paper at the bottom of the loaf pan.

2 cups cake flour (or all-purpose flour)
2 teaspoons baking powder
1/2 teaspoon salt
2 eggs
1/2 cup oil
1 1/3 cups sugar
3/4 cup buttermilk
3 Tablespoons lemon juice
zest of one lemon
1 cup grated zucchini
GLAZE:
1 cup powdered sugar
3 Tablespoons lemon juice
Recipe
Preheat the oven to 350°. Use some non-stick spray on a 5” x 9” loaf pan and place parchment paper at the bottom of the loaf pan.
Zest one lemon. Set zest aside.
Grate zucchini, and wring out the zucchini in a towel to remove moisture. Measure out one cupful of zucchini.
In a mixing bowl beat the eggs. Then add the oil and sugar. Add lemon juice, buttermilk, and lemon zest to the mixture and blend together well.
Sift the flour, baking powder, and salt together into the wet mixture. Mix until well combined. Fold in the zucchini.
Pour the batter evenly into the prepared loaf pan and bake for 50 to 60 minutes. To make the glaze, stir together the powdered sugar and the lemon juice. Pour over the bread while it is still warm once you have removed it from the oven. Let the glaze soak in to the bread and set for a few minutes before cutting and serving
