    Sauce: Enchilada Sauce

    List of Ingredients

    6 ounces no salt tomato paste
    3 cups water
    pinch of cayenne pepper
    1/2 tsp. garlic powder
    1 tbl. onion powder
    1/8 tsp. cumin
    1/8 tsp. pepper
    1/8 tsp. coriander
    2 tsp no salt chili powder
    1 tbl. cornstarch
    additional 2 tbl. water

    Recipe

    In a large saucepan set over medium heat, combine and cook the tomato paste, water, cayenne, garlic powder, onoin powder, cumin, coriander, pepper and chili powder until the sauce boils. Reduce the heat and simmer for 10-12 minutes. In a small bowl, dissolve the cornstarch in the additional water and gradually add it to the sauce, stirring continuously, until the sauce thickens. Makes 1 quart.
