Chicken: Chicken Cacciatore Sauce

cooking spray or broth or red wine for sauteeing chicken
1 Ępound fresh boneless, skinless chicken breasts, cut into 1/2-inch cubes
2 Ę medium onions, peeled and chopped
3 Ęcloves garlic, peeled and minced
2 Ęcups sliced mushrooms
1 Ę large green bell pepper, seeded and julienned
1 Ęcan (28-oz.) Italian-style tomatoes, drained
2/3 Ęcup dry red wine
1/4 Ęcup chopped fresh parsley
1 Ęteaspoon crushed dried oregano
1/2 Ęteaspoon dried thyme
1 Ę bay leafRecipe
Heat a large skillet over medium-high heat. Spray with cooking spray, or use broth or wine and add chicken; saut until golden brown on all sides, about 5 minutes. Remove chicken to a plate with a slotted spoon. Reduce heat to medium, add garlic and onion and saut for 3 minutes, or until tender. Mix in mushrooms and green bell pepper and saut for 5 minutes. Add tomatoes, wine, parsley, oregano, thyme, bay leaf and reserved chicken. Bring to a boil, reduce heat and simmer gently for 20 minutes.
Reader's Comments: This recipe is wonderful. I added chicken broth instead of the red wine since I didn't want to buy an entire bottle of wine for one recipe. Also, when the recipe asked for canned stewed tomatoes, I used the Italian flavored kind and just dumped them in, juice and all. It makes the sauce a little soupier, which is the way we like it.
