◦ ½ cup (1 stick) unsalted butter, cut into pieces
◦ 6 ounces bittersweet chocolate, finely chopped
◦ 1 ½ cups sugar
◦ 3 large eggs
◦ ¼ cup unsweetened cocoa powder
◦ ½ teaspoon salt
◦ ½ cup plus 2 tablespoons all-purpose flour, sifted
Recipe
Preheat oven to 350° F. Line an 8-inch baking pan with parchment, leaving an overhang on all sides. Combine butter and chocolate in a heatproof bowl set over (not in) a pan of simmering water; stir occasionally until melted and smooth.
Remove bowl from heat and whisk in sugar. Add eggs, one at a time, whisking until incorporated. Whisk in cocoa and salt. Add flour and fold in with a flexible spatula until just combined.
Pour batter into prepared baking pan. Bake until set and a cake tester inserted in the center comes out with just a few moist crumbs attached, 35 to 40 minutes. Transfer the pan to a wire rack and let cool about 15 minutes. Using the paper overhang, lift brownies from the pan and let cool completely on the rack before cutting into 2-inch squares. (Brownies can be stored up to 3 days at room temperature in an airtight container.)
