Recipe Introduction
"The origin of this well-loved sandwich is lost in the mists of time, but its top-ranking status as a quick and satisfying family meal has never been in question. Think of it as the other way to enjoy ground beef in a bun, except with this dish the meat is browned with chopped onion and garlic, then made into more than the sum of its parts by way of a tangy-sweet tomato sauce and seasonings. There's no reason to reach for store-bought powdered mixes (or canned versions of the finished product) when making Sloppy Joes from scratch is so easy to do—and so clearly worth the extra effort."

◦ 1 ¼ pounds ground beef chuck
◦ Coarse salt and freshly ground pepper
◦ 1 onion, finely chopped
◦ 2 cloves garlic, minced
◦ 1 can (14.5-ounce) puréed tomatoes
◦ 2 tablespoons light brown sugar
◦ 1 tablespoon cider vinegar
◦ 1 tablespoon tomato paste
◦ 1 teaspoon Worcestershire sauce
◦ 1 ½ cups water
◦ 4 hamburger buns
Recipe
Cook beef in a large skillet over medium-high heat, breaking apart pieces with a spoon, until lightly browned, 5 to 6 minutes. Season with salt and pepper. Add onion and garlic; cook, stirring occasionally, until translucent, about 5 minutes.
Add puréed tomatoes, brown sugar, vinegar, tomato paste, Worcestershire sauce, and the water. Reduce heat to medium-low; simmer until thickened, stirring occasionally, about 20 minutes.
Divide evenly, spoon over bottom halves of buns, top with top halves, and serve immediately.
