    Chocolate-chip cookie trifle

    Source of Recipe

    Posted By: Gale

    Recipe Introduction

This trifle is made with store-bought chocolate chip cookies and can be assembled in less than thirty minutes. For a large crowd, buy 32 cookies, double the remaining ingredients and put it in two glass bowls or one large bowl. A punch bowl works, if it is not too deep. Serves 10.

    List of Ingredients

    FOR THE FUDGE SAUCE

    2/3 cup heavy cream
    2 tablespoons unsalted butter
6 ounces (1 cup) semisweet chocolate chips
    1 teaspoon vanilla extract

    1. In a medium saucepan, heat the cream and butter over medium-low heat just until the butter melts.

    Remove from heat.

    2. Add chips and let soften for about 30 seconds. Add the vanilla and stir until sauce is smooth and chips melt. Set it aside.

    FOR THE FILLING
    3 cups cold heavy cream
    3/4 cup confectioners' sugar
    1 teaspoon vanilla extract
1 tablespoon plus 2 teaspoons instant coffee granules
16 large (3-inch) homestyle chocolate chip cookies
1/2 cup strong, sweetened fresh coffee
1/4 cup (about 1 1/4 ounces) crushed toffee candy, such as Heath Bars

    Recipe

Have on hand a 3-quart glass serving bowl. In an electric mixer, beat the cream, confectioners' sugar, vanilla and instant coffee until firm peaks form.

    2. Spread about 1 cup of the whipped cream in the bottom of the bowl. Dip 4 cookie bottoms quickly in the coffee and arrange them on the cream. Drizzle a thick layer of fudge sauce over the cookies. Spread about 2 cups of the whipped cream over the cookie layer.

    3. Repeat to form 2 more layers. Dip the remaining 4 cookies in the coffee and arrange them over the top layer of cream (you'll have coffee leftover). Sprinkle the toffee evenly over the cookies and drizzle the remaining fudge sauce on top.

    4. Refrigerate uncovered just until the chocolate is firm, then cover with plastic wrap and refrigerate overnight. Serve within 2 days.
