Zucchini Frittata

Great stuffed into pita bread.
List of Ingredients
1 cup shredded zucchini
1/2 cup chopped onion
1 teaspoon cooking oil
3 eggs, beaten
1/4 teaspoon salt
1 cup (4 ounces) shredded Swiss cheeseRecipe
In an 8 inch ovenproof skillet over medium heat, saute zucchini and onions in oil for 2 to 3 minutes or until tender. Pour eggs over top; sprinkle with salt. Cook until almost set, 6 to 7 minutes. Sprinkle with cheese. Bake, uncovered, at 350 degrees for 4 to 5 minutes or until the cheese melts.
Yield: 2 servings.
