    Crockpot Bean Dinner Mix

    List of Ingredients




    Place in jar or bag and seal:
    1 pound great northern beans (about 2 cups)

    Measure the following into a small baggie and seal:
    1/2 cup dried chopped onions
    1/2 teaspoon instant minced or dried granulated garlic
    1 tablespoon salt
    2 tablespoons chili powder
    1 tablespoon cumin
    1 teaspoon oregano

    Find an appropriately sized bag or box and place the beans, spice mix. Arrange it attractively. Toss in a package of flour tortillas (get a brand that doesn't require refrigeration) or tostada shells, some non-refrigerated salsa, maybe a jar of hot peppers or olives too.

    Besides this nifty package, you'll need:
    2 pounds lean boneless pork (any cut you like)
    or turkey or chicken breast or thighs
    7 c water

    Optional ingredients (use what you like or have on hand)
    chopped fresh tomatoes, onion, lettuce, olives, peppers, jalepenos,

    Wash and pick over beans and place in crockpot along with spice mix, water, and meat of choice. Don't cut the meat up small, you can leave it whole or in large chunks.

    This is important: if you feel like adding something else, you must not add anything that is sweet or acidic, or your beans will not get soft! These kinds of ingredients may only be added after the beans have completely softened.

    Cover and cook on HIGH for 5-7 hours, until beans are done and meat falls apart. If the beans are "soupy" take the cover off and leave it off, but leave crockpot on HIGH while you do the next step, and until serving time, so some of the liquid can reduce.

    Pull the meat into shreds if you like, or just break into chunks, and stir back into the beans. Mash up some of the beans to thicken the mixture. Serve on tostada shells or flour tortillas with salsa and other toppings of choice. May also be served with corn or tortilla chips, or in taco shells.
