Warm Goat Cheese Salad

List of Ingredients
- 1 log (4 oz) fresh goat cheese
- 1 C bread crumbs
- 1 t dried tyme or Italian seasoning
- snp
- 1 egg lightly beaten
- 1/4 C walnuts/pecans
- 16 cups mixed greens (6 oz bag)
- Balsamic Vinaigrette
- 1 pear, peeled, cored and sliced
Instructions
- Slice the goat cheese into four 1/2 in. disks. Form back into disks if it crumbles. Pour the crumbs onto a plate and toss w/ thyme and snp
- Dip the cheese into the egg, then into the crumb mix and turn to coat evenly. Place the disks on a plate and into the freezer for 15 min. to firm up.
- Preheat oven to 450. Place cheese on a baking tray w/ cooking spray and bake 10 min. until cheese is soft and crumbs are toasted. Remove. While the oven is still hot, toast the nuts for 5 minutes
- Toss the lettuce w/ dressing and pear. Divide among4 cold plates. Top w/nuts and goat cheese
