TOMATO - GREEN BEAN SALAD

Breaded Pork Chops
1 cup seasoned bread crumbs
2 tablespoons grated Parmesan cheese
1/3 cup ranch salad dressing
6 pork chops (1/2 inch thick)
In a shallow bowl, combine bread crumbs and Parmesan cheese. Place dressing in another bowl. Dip pork chops into dressing, then coat with crumb mixture. Place in an ungreased 13-in. x 9-in. x 2-in. baking pan. Bake, uncovered, at 375° for 25 minutes or until meat juices run clear. Yield: 4-6 servings.

1 lb. fresh green beans, trimmed and halved
2 med. tomatoes, sliced
1 sm.onion, sliced
1/3 c. olive or vegetable oil
3 tbls red wine vinegar
1 tsp Dijon mustard
1/4 tsp salt
1/8 tsp pepper
Recipe
In a saucepan, cook beans in water for 6 minutes or until crisp-tender. Rinse with cold water and drain. Place beans in the center of a large plate. Arrange tomato and onion slices around beans. Whisk together remaining ingredients; pour over the vegetables. Chill until ready to serve. Yield: 4-6 servings.
