    Serves 4

    List of Ingredients




    2 Tablespoons Unsalted butter
    1/2 Yellow Onion -- 1/2 inch dice
    1/2 Green Bell Pepper -- 1/2 inch Squares
    1/2 Red Bell pepper -- 1/2 inch Squares
    6 ounces Canadian bacon -- 1/2 inch dice
    8 Eggs -- lightly beaten
    Salt and white pepper to taste
    2 ounces Cheddar Cheese -- Shredded
    1 Tablespoon Fresh Parsley -- Finely Chopped








    Recipe



    Melt the butter in a medium-size nonstick saute pan over medium heat. Add the onion and peppers, and cook for about 3 minutes or until tender. Add the Canadian Bacon and cook for one more minute.

    Add the Eggs to the pan and season with salt and pepper. Cook at medium-low heat, stirring frequently. Stir in the cheese and continue cooking until done to your liking.

    Serve on warm plates and garnish with parsley.
