1 C white granulated sugar
1/2 C light corn syrup
1/4 C water
3/4 tsp extract flavoring
food coloring (optional)
Recipe
Combine the sugar, corn syrup and water in a medium saucepan over medium heat and stir until sugar is dissolved. Place your thermometer into the pan, keeping it from resting on the bottom. Heat to a boil without stirring, until candy reaches 295-300 F. (hard crack stage). Remove from heat and quickly stir in your extract and food coloring. Immediately pour into molds for lollipops, or a buttered pan. Let set at room temp until candy hardens. If you used the pan, break into small pieces. Store in a cool dry place covered with until ready to use.
