Costa-Rican beet pudding

List of Ingredients
- 1 C beet juice
- 1 C water
- 1/2 C sugar
- 6 whole cloves
- one quarter tsp. allspice
- one quarter tsp. cinnamon
- 4 T cornstarch
- 1 T lemon juice
- 2 T grated coconut
Instructions
- Combine beet juice, three quarters cup water, sugar, cloves, allspice and cinnamon. Cook slowly, uncovered, ten minutes.
- Mix cornstarch with one quarter cup wate one minute. Remove cloves. Add lemon juice. Mix well
- Spoon into dessert dishes and garnish with coconut.
