1 pound of small beets
prepared horseradish
pats of butter
Recipe
Leave the root ends on the beets, cut stems a half inch above above beets. This prevents them from bleeding as they cook. bake in foil, in a 350 degree F. for 45 minutes for small beets, or 1 hour for medium beets.
Cool until they can be handled. Cut off root ends and stems. slide skins off. Scoop out the centers leaving a thin shell. Fill with the horseradish and a small piece of butter. Reheat in the oven.
