1 1/2 pounds calf live
2 T butter
1 tsp salt
1/2 tsp pepper
2 T minced parsley
Recipe
Cut liver into half inch slices. Wash and dry thoroughly. Dip slices in the butter, melted and sprinkle with salt and pepper. Place on greased broiler. broil about 3 inches from heat source, on medium heat, turning once in 3-5 minutes to cook both sides, cook another 3-5 minutes. Place on hot platters and garnish with parsley.
