    Sweet potato-raisin patties

    4 medium sweet potatoes
    1 egg
    1/2 tsp salt
    3 T flour, if needed
    1/2 C raisins

    Recipe



    Cook and mash the sweet potaoes. Beat in the egg and salt. Add flour if potatoes are too wet, Mix in raisins.
    Drop by tablespoonful on heated, greased fry pan . Brown slowly on both sides.
    Makes 1 dozen patties
