A MUST at Thanksgiving time!

List of Ingredients

3 cups sweet potatoes, mashed, cooked
1/2 cup sugar
2 large eggs, beaten (or 1/2 cup egg substitute)
1/2 tsp salt
1/2 stick light butter, melted
1/2 cup skim milk
1/2 tsp vanilla extract

TOPPING
1/2 cup brown sugar
1/2 cup flour
1 cup pecans, chopped
1/3 cup light butter, melted


Recipe

Mix potatoes, white sugar, eggs, salt, 1/2 stick melted butter, milk & vanilla in large bowl. (I just mix it all in the casserole dish). Spoon into 1-1/2 quart casserole. mix topping mix and sprinkle evenly over potato mixture. Bake at 350* for 35 minutes. Serves 8

Casserole doubles nicely.
