Creamed Cornbread

Recipe Introduction
This recipe has been in my family for years. I am not sure of where it originated at. This is great served with a roast or a quick fix for hungry kids served in a bowl of milk.
List of Ingredients
- 1 Medium onion, chopped (optional)
- 2 Large eggs, beaten
- 1 Can creamed corn
- 1 3/4 Cup yellow self rising cornmeal
- 1/2 Cup vegetable oil (use EVOO if watching cholesterol)
- 1 Cup milk
- 1/2 Teaspoon salt
Instructions
- Using cast iron skillet, pour 4 tablespoons EVOO into skillet and place in oven while preheating to 400'
- In a mixing bowl, combine cornmeal and salt. Blend well.
- Add onions, eggs, corn, oil and milk. Mix well.
- Remove cast iron skillet from oven after it has heated fully.
- Slowly pour batter in HOT skillet. Bake at 400' for 35 to 45 minutes.
- Cornbread is ready when it reaches the golden brown stage.
Final Comments
This is an optional version of regular cornbread. It adds a certain kick to it and makes it moist.
