    Recipe Introduction


    This recipe has been in my family for years. I am not sure of where it originated at. This is great served with a roast or a quick fix for hungry kids served in a bowl of milk.


    List of Ingredients


    • 1 Medium onion, chopped (optional)
    • 2 Large eggs, beaten
    • 1 Can creamed corn
    • 1 3/4 Cup yellow self rising cornmeal
    • 1/2 Cup vegetable oil (use EVOO if watching cholesterol)
    • 1 Cup milk
    • 1/2 Teaspoon salt


    Instructions


    1. Using cast iron skillet, pour 4 tablespoons EVOO into skillet and place in oven while preheating to 400'
    2. In a mixing bowl, combine cornmeal and salt. Blend well.
    3. Add onions, eggs, corn, oil and milk. Mix well.
    4. Remove cast iron skillet from oven after it has heated fully.
    5. Slowly pour batter in HOT skillet. Bake at 400' for 35 to 45 minutes.
    6. Cornbread is ready when it reaches the golden brown stage.


    Final Comments


    This is an optional version of regular cornbread. It adds a certain kick to it and makes it moist.
