Since I have been cooking since I was 10, I have grown to appreciate different styles of cooking. Now since I have been cooking professionaly for close to 30 years and being a merchant seaman for the past 13 years, I have collected recipes and cook books from all the places I have been. Also having had a captive audience I was able to introduce a variety of menues and obtaining valuable feed back. Let's put it this way. It had to be good or I would be treading water. |

Though a Chef should be respected for his or her position, to me a chef is just a good cook with a title. I have known a lot of great cooks that could hold their own with some of the chefs in the profession. The main thing is that a good cook should have a passion for what they are doing, an adventurous focus on what they are cooking, and no fear for experimentation. A recipe is just a guide and then it is the cook's finishing touch to put his or her's personality into the meal. It could be a slight change of ingredients, a change of technique, or a change of timing. By doing this you have placed your signature on that meal. With that in mind your cooking becomes a challange, exciting and fun. I have accumulated over a million recipes through the years so I will try and put new ones in each catagory weekly. Some I have altered and some I have kept as is. Next to the recipe I will let you know which ones I have modified and from who,s original recipe I had used. So without further ado Bien Provecho and Bon Appatite, and let the show begin !! |
