    Raspberry Mousse

    Recipe Introduction

    Almost Level 1 ~ Pro/Fat

    List of Ingredients

This is my first food post and I'm so excited that I have found a homemade raspberry mousse similar to the SS mix!

1/2 pkg (4 ounces) Phily cream cheese (softened-I like Philly because there are no additives)
Sweetener to equal 2/3 cup sugar
1 cup frozen raspberries, measure frozen, then thaw
    1 cup heavy cream

    Recipe

Puree the raspberries. I like to leave the seeds in. With mixer, blend the softened cream cheese, SomerSweet, raspberry puree until light.

In a separate bowl, whip the heavy cream until soft peaks form.

Fold the raspberry cream cheese mixture into the whipped cream.

Chill for a couple hours until firm.

Garnish with fresh berries and Somersweetened whip cream. I could not keep my spoon out of the bowl!

    * Deb's notes ~ I double this and use a 12oz bag of raspberries. I use a total of 1 2/3 cups splenda (in the double recipe), making it sweeter than the recipe states. I also make this with a "mixed berry blend" that we actually like the best. I buy these at Costco, a blend of marionberries, blueberries and raspberries.
