Autumnal Salad

Optionally you can add red capsicum slices, thinly sliced celery, roasted sweetcorn kernels, pear etc
serves 2
List of Ingredients
- 1 small handful pecans
- 1 crisp apple
- 1 orange
- large handful lettuce, baby spinach, rocket or any salad greens you like
- seeds from 1/4 pomegranate (more if you like) or a scatter ot craisins
- 2 tbsp apple cider vinegar
- 1 tsp dijon or seeded mustard (optional)
- salt and pepper
- 2-4 tbsp good quality olive oil (but I used tahini instead today and that also worked well)
- 1/2 red onion or 2 spring onions
Instructions
- Dry roast pecan in a pan (without oil) or in the oven but not too long so they don't burn
- Peel orange and seperate into segments. Do this over the bowl you will make dressing in, so if there is any juice it mixes with the dressing.
- Combine orange segments with thinly sliced apple (remove core), thinly sliced onion or spring onion, and salad leaves. If using other veggies you can also slice them thinly and add them here.
- Mix together oil or tahini with salt, pepper, mustard (optionally) and vinegar. Drizled over salad and toss
- Scatter over roasted nuts and pomegranate seeds (or craisins)
- Enjoy staying healthy in autumn.
