Red Beans + Sausage
1 package of dried red beans
6 long pieces of celery, diced
1 bell pepper, diced
5 cloves garlic, (2 Tbsp. jarred)
1 vacuum package smoked sausage,
...about 1 1/2 pounds, cut into
...1 inch pieces
Soak the beans in water for about 4 hours.
Saute the vegetables in some Olive oil until
transparent. Remove from pot.
Brown the sausage in the same oil.
Drain the red beans and add with the vegetables.
Saute for about 3 minutes.
Add sausage and about 2 quarts water.
Cook for about 2 hours, or for 3 if you like the
beans really soft.
Serve with hot rice.
