• 175g (6oz) chopped dates
• 175g (6oz) dark sugar
• 60ml (2fl oz) water
• 100g (4oz) butter
• 3/4 of a 250g (9oz) pack Cauldron Foods Organic Original Tofu, drained
• Two free range eggs
• 300ml (½ pint) milk
• One teaspoon vanilla essence
• 400g (14 oz) self raising flour
• Three tsps baking powder
• 0¼ teaspoon salt
• 12 chocolate Rolos
• 12 cupcake casesRecipe
1. Preheat oven to 180°C/350°F/ Gas Mark 4.
2. Blend tofu in a food processor until it is smooth.
3. Place dates, butter, sugar and water into a saucepan. Warm over a low heat until the butter has melted. Leave to cool.
4. Add the pureed tofu and gently combine. Add the eggs one at a time along with the vanilla essence and milk mixing well.
5. In a large bowl sift the flour, baking powder and salt. Make a well in the centre and pour in the date mixture. Gently stir the ingredients together until they are just combined.
6. Place a spoonful of mixture in the bottom of each paper case. Gently place in a Rolo and cover with another spoonful of muffin mixture.
7. Bake for 20 minutes or until risen and lightly coloured.
