    3 - 16 oz. cans Great Northern white beans (or
    equivalent amount of cooked dry beans)
    5 chicken breasts, boneless
    2 Tbs. olive oil
    1 medium onion, chopped
    1 - 4 oz. can chopped green chilies
    1 tsp. cumin
    1 tsp. dried oregano
    1 clove garlic, minced finely; or used bottled minced garlic
    1/2 tsp. cayenne pepper
    3 - 16 oz (6 cups) chicken stock or broth
    3 cups grated Monterey Jack cheese
    1/4 C. Butter
    Salt and pepper to taste

    Place chicken breasts in large saucepan. Add cold water to cover and
    bring to simmer. Cook until tender, about 15 minutes. Drain and
    cool. Remove skin (if you didn't get skinless breasts), and cut
    chicken into cubes.

    In large saucepan, heat olive oil. Add onions and saute until
    translucent; about 10 minutes. Stir in garlic, chilies, cumin,
    oregano, and cayenne pepper, and saute for 2 minutes. Add undrained
    beans and chicken stock, and bring to a boil. Reduce heat and add
    chicken and cheese to chili and stir until cheese melts. Season to
    taste with salt and pepper; add butter. Let set for at least one hour
    prior to serving to allow flavors to blend. Heat and serve. You can
    top with a dollop of sour cream if you wish.
