List of Ingredients
4 Qt. beef broth
2 medium beets -julienned
4 small heads of green cabbage-sliced
2-3 large potatoes -peeled and cubed
1 small can tomato paste
2 tomatoes-peeled and cubed
1 medium carrot - shredded
1 small onion -chopped
4 garlic cloves -diced
2-3 bay leaves
1/2 tsp. black peppercorn -dry
chopped parsley, dill
1/2 c. vinegar
1/3 c. sugar
salt to taste
1/3 c. oilRecipe
Sautee cabbage, add tomato paste, sautee for additional 2-3 minutes. Add hot broth, bring to boil and continue boiling for 5 minutes. Add cubed potatoes and bring to boil again. Sautee onion, add carrot and continue to cook until orange color. Add tomatoes and cook for 3-5 minutes. Add to boiling borcht, pour in vinegar, add sugar, salt, bay leaves, peppercorns and bring to boil. Add beets and cook for 2-3 minutes for red color. Add garlic, chopped herbs and remove from heat. Serve with sour cream.
