Jackson Style Vegetable Soup

3 medium Irish potatoes, chopped
1 large onion, chopped
1/2 pound cut okra, fresh or frozen
Salt to taste
1 46-ounce can tomato juice
2 16-ounce cans crushed tomatoes
Recipe
In 4-quart covered pot cook potatoes, onion, and okra in salted water for about 20 minutes. Add tomato juice and crushed tomatoes and cook uncovered 30 to 40 minutes. Stir occasionally. Serve with Southern Corn Bread.
