Oats and Raisin Muffin

List of Ingredients
2 cups oats
2 tsps. baking powder
1 tsp. ground cinnamon
1/2 tsp. nutmeg
1 cup milk, preferably
skim milk
1/3 cup honey
1/4 cup vegetable oil
2 egg whites
1 cup raisins
Recipe
1. Preheat oven to 400 F/200 C. Grease a 12-cup muffin tin.
2. In a large bowl, combine oats, baking powder, cinnamon and nutmeg.
3. In a separate bowl, mix liquid ingredients then add to dry ingredients.
4. Stir until just moistened. Add raisins and stir.
5. Spoon into muffin cups until 3/4 full.
6. Bake for 20 to 25 minutes or until a toothpick inserted comes out clean.
Yield 12 muffins.
