Haddock with Faux Crab
1 lb. Haddock (cod, flounder)
1 stick of butter (1/2 C.) melted
1/2 C. chopped imitation crab
1/2 C. bread crumbs
1 tbsp. sherry
Recipe
Melt butter, put enough in (2) two ramekins (small oven proof dishes) to cover bottom of dish. Cut haddock into 4 more or less even pieces. Place one (1) piece into each dish. Mix bread crumbs and sherry into remaining butter, reserving 1/3 of crumb mixture. Into 2/3 of crumb mixture add chopped crab. Put 1/2 of crab mixture on top of each fish serving. Place remaining haddock on top. Divide reserved 1/3 of crumb mixture on top of fish. Place dishes on a cookie sheet and bake at 450° for approx. 20 min. or until brown and fish is cooked.
