Pistachio Crusted Tilapia

2- 7 to 9 oz. Tilipia fillets
1/2 to 2/3 cups ground Pistachios (SHELLED)
1 Tbsp EVOO (Extra Virgin Olive Oil)
Salt & Pepper to taste.
Heat a large skillet (Non-stick works great) to medium heat +-350*
Season Fillets
Place ground nuts on a paper plate and evenly distribute.
Put the non-skin side of the fish on the nuts and press gently.
Pour oil in skillet and place the nut side of the fish in the oil.
Cook 3-4 minutes or until you smell roasted nuts.
Turn fish over and finish cooking.
Using a spatula put fish on a plate and enjoy.
