Carrot Pineapple Cookies

2 cups flour
1 1/2 tsps baking powder
1 1/2 tsps cinnamon
1 1/2 tsps ginger
1 tsp nutmeg
1/2 cup margarine
1/3 cup firmly packed brown sugar
1 egg
1/2 tsp vanilla extract
1 cup shredded carrots
1 (8 ounce) can crushed pineapple, drained
Vegetable cooking spray
Recipe
Combine first 5 ingredients, stir well. Set aside.
Cream margarine in a medium bowl, gradually add sugar, beating well. Add egg
and vanilla, beat well. Stir in reserved flour mixture. Gently stir in
carrots and pineapple.
Spray cookie sheet with cooking spray. Drop dough by rounded teaspoonfuls 2
inches apart onto cookie sheet. Bake at 350 degrees for 12 minutes or until
golden brown. Remove from cookie sheets and cool completely on wire racks.
