    Italian Asparagus

    List of Ingredients

    1 lb fresh asparagus spears
    3/4 c chopped tomatoes
    2 T chopped green onions
    1/8 t dried oregano
    1/8 t dried thyme
    1/8 t pepper
    2 t freshly grated parmesan cheese


    Recipe

    Snap off tough ends of asparagus. Remove scales from stalks
    with a knife or veggie peeler, if desired. Arrange asparagus in
    a veggie steamer over boiling water. Cover and steam 4 to 5
    minutes or until crisp tender, keep warm. Combine tomato and
    next 4 ingredients in a small bowl, stir well. To serve, spoon
    tomato mixture over asparagus, sprinkle with cheese. Makes 4
    servings.

    Nutritional information: 44 calories, 1 g fat, 4 g protein,
    8 g carbohydrates, 1 mg cholesterol, 124 mg sodium, 2 g fiber.
