    List of Ingredients




    1 1/2 c. ap flour
    1/2 c. cornmeal
    1 tsp baking powder
    1 tsp salt
    6 oz cream cheese, softened
    6 eggs
    1 c. milk
    1/4 c. butter, melted
    1 15-1/4 oz can whole corn, drained
    1/2 c. salsa, drained
    1/4 c. minced green onions
    sour cream and additional salsa

    Recipe



    Combine flour, cornmeal, baking powder and salt. Set aside. Beat chream cheese and eggs, add milk and butter. Add to dry ingreds just until moistened. Fold in corn, salsa and onions. pour batter by 1/4 c. onto greased hot griddle. Turn when bubbles forn on top; cook until second side is golden brown. Serve w/ sour cream and salsa.
    Yield 6-8 servings
