Mexican Slaw

List of Ingredients
1/3 c. olive oil
2 T. orange juice
2 T. lime juice
1 garlic clove, minced
½ t. ground cumin
½ t. salt
½ t. pepper
1 (10 oz.) pkg. finely shredded cabbage
½ lb. jicama, shredded (2 c.)
1 large carrot, shredded (about ½ c.)
1 jalapeno pepper, seeded and diced
¼ c. chopped fresh cilantro
Recipe
Whisk together olive oil and next 6 ingredients in a large bowl. Add cabbage and remaining ingredients and toss to coat. Cover and chill slaw mixture at least 4 hours.
Serves 8.
