    Egg Farm Dairy Butter Cookies

    Source of Recipe

From Jonathan White of Egg Farm Dairy, Peekskill, N.Y.

    List of Ingredients

1/2 cup (1 stick) unsalted butter, softened

    3/4 cup sugar

    1 egg

    1 tablespoon milk

    1/2 teaspoon vanilla extract

    1 1/2 cups unbleached flour

    1/4 teaspoon baking powder

    1/8 teaspoon salt

    Recipe

Heat oven to 350 degrees. Beat butter in bowl of electric mixer until light, about 2 minutes. Gradually add sugar; beat in egg, milk and vanilla until well blended. Combine flour, baking powder and salt in bowl. Add to butter mixture; beat thoroughly.

Drop dough by level teaspoons onto ungreased cookie sheets or press through a cookie press. (To make rolled cookies, add 1/4 cup flour to batter to form stiff dough. Refrigerate about 4 hours or overnight.) Bake in batches until cookies are golden at edges, 8 to 10 minutes. Let sit on cookie sheet about 5 minutes; transfer to cooling rack.
    Makes 3 dozen.
